Stir-Fried Potatoes cooked with Coconut Milk ( Sambal Goreng Kentang )


Another easy and quick side dishes meal.

Here, I share the recipe and available in English and Indonesia version.

Please, Don't hesitate to dropping any comment or question regardless this recipe. I need it for my better cooking in the future :-)


What you need :

3 cloves shallots, finely chopped 
2 pieces medium potatoes,diced
1 piece tomato, sliced
1 cup chicken/beef, cube sliced 
1 cup green peas
salt and sugar for adjust the taste
1 cup coconut milk 
2 teaspoon sambal oeleg or 2 pieces Thai chili then finely chopped - as you wish
olive oil or butter for saute 

Note : 1 US cup = 236.588237 ml


Make it :

English version
- In a hot skillet, add sambal oeleg, shallots with a bit of oil, saute approx. 1-2 min or until aromatic under low heat.
- Add chicken, saute continuously until chicken are almost tender for another 3-4 minutes.
- Add potatoes into skillet, saute and combine it.
- Then add coconut milk, stir it evenly, until all the liquid absorb.
- Adding sugar and salt for adjust the taste.
- And for last step, add sliced tomato, saute until mix well for another 1 minutes. Remove from heat.
- Then ready to serve with hot steamed rice.

Indonesia version
- Didalam wajan panas, tumis cabe halus dan bawang merah dengan menggunakan api sedang hingga harum.
- Masukkan ayam, aduk terus menerus hingga ayam hampir lunak.
- Masukkan kentang kedalam wajan dan aduk rata.
- Masukkan santan kental, aduk sesering mungkin dan biarkan hingga santan meresap.
- Masukkan garam dan gula sebagai perasa.
- Masukkan irisan tomat, aduk rata selama 1 menit. Angkat dari kompor.
- Sajikan hangat bersama nasi putih :-)
