Kung Pao Seafood

Seafood is a good option when I get bored with beef or chicken. I am glad that I find frozen mixed seafood on my freezer. As a result, I cook Kung Pao Seafood for our lunch.
Here, I will share the recipe with you and maybe give you some ideas.

What you need:
1,5 cup mixed seafood
Marinade:
2 teaspoons soy sauce
2 teaspoons Chinese rice wine or dry sherry
1 teaspoon sesame oil
1 1/2 teaspoons cornstarch
Sauce:
2 tablespoons dark soy sauce, I substituted with regular soy sauce
1 tablespoon Chinese rice wine or dry sherry
1 teaspoon sugar, I substituted with brown sugar
8 small dried red chili peppers or red pepper flakes - optional
2 cloves garlic
2 green onions (spring onions, scallions)
4 tablespoons oil for stir-frying, or as needed
1/2 cup peanuts or cashews
a few drops sesame oil, optional
white pepper

How to make it:
Start with combining the marinade ingredients, adding the cornstarch last. Marinate the mixed seafood for 10 minutes.
While the seafood is marinating, prepare the sauce and vegetables: In a small bowl, combine the dark soy sauce, rice wine, and sugar. Set aside.
Cut the chilies in half so that they are approximately the same size as the seafood cubes. Remove the seeds. Peel and finely chop the garlic. Cut the green onion on the diagonal into thirds.
Heat the wok over medium-high to high heat. Add 2 tablespoons oil. When the oil is hot, add the chicken. Stir-fry until it turns white and is 80 percent cooked. Remove from the wok.
Add 2 tablespoons oil. When the oil is hot, add the garlic and stir-fry until aromatic (about 30 seconds). Add the chili peppers and the Szechuan peppercorn if using. Stir-fry briefly until they turn dark red.
Add the sauce to the wok. Bring to a boil. Add the chicken back into the pan. Stir in the peanuts and the green onion. Remove from the heat and stir in the sesame oil. Serve hot.
Preparation : 10 minutes
Cooking : 20 minutes

Homemade Shrimp Balls ( Baso Udang )

We bought 1 lbs of shrimps at Costco. I really want to buy it because they always have big shrimps with competitive price.
I want to cook some kind of soup, decided to make shrimp balls.
If you checked the picture, the balls surface isn't smooth. Shrimps and the other ingredients quick chopped (I used chopper machine). You have to make sure the other ingredients smooth chopped.
You can substitute shrimp with beef or chicken.

What you need :
- 1 cup shrimps, peeled the jacket (I used 8 pieces of big shrimps)
- 2 cloves garlic
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon sesame oil
- 1 spoonful cornstarch
Make it :
1. Put garlic into chopper, chopped it until smooth. Add shrimps, sesame oil, sugar, salt and chopped them. Add cornstarch, mix with them smoothly.
2. In a pot, bring water into broil. Used to spoon to make a little ball, put into boiling hot water until it flood. Repeat until the dough is finish.
3. While the ball was flood, put it into a plate. Set aside.
Preparation : 15 minutes
Cooking : 10 minutes
Servings : 15 balls

Baked Salmon with Mushroom sauce
We got fresh frozen Salmon from my husband's father, and today I want cook with a fish. I was browse to my recipe collection, and I found recipe from The Prepared Pantry. I didn't follow the original recipe, I've tried to substitute chicken with Salmon also I made my own seasoning. I made my own taste and trust me, it's turn out so good.

Beside, the salmon pours with mushroom sauce, without it the salmon with my marinated recipe are delicious. So, you can choose in here, whether with the sauce or not.
Suggestion serving for this dish is steamed vegetables and potatoes - you can steamed or fried it.

What you need :
- 15 oz Salmon, if frozen, thawed
Marinated Seasoning Ingredients :
- lime juice
- salt
- freshly ground pepper
- olive oil
Mushroom sauce ingredients :
- 1 cup thinly sliced Button Mushrooms
- 2 cloves garlic, thinly slice
- 1/3 cup dice onion
- salt
- pepper
- 2 teaspoon corn starch or all purpose water and dissolve with 2 tablespoon of water in a bowl
- 100 ml milk
- 50 ml chicken/beef broth
- 1 tablespoon butter
- 1 tablespoon oil for saute

Make it :
1. Preheat oven for 400 degrees F.
2. Marinated Salmon with mixed olive oil, salt, pepper and lime juice. Let it rest for 15 minutes at room temperature.
3. In baking dish, spray with oil, then place the marinated salmon, bake for 15-20 minutes.
4. Sauce : In a hot wok, heat oil and butter then add garlic and onion, saute for 2 minutes.
5. Add sliced mushroom, saute for 3 minutes then add milk and broth.
6. Adjust taste with salt and pepper. Cook for 5 minutes then add mixed cornstarch+water for thickening the sauce. Let it simmer for 2 minutes.
7. Place baked salmon into prepared dish then pour with mushroom sauce. Serve hot. Enjoy.
Preparation : 5 minutes
Cooking : 20 minutes

Sweet and Sour Steamed Shrimp ( Pepes Udang )

What you need :
- 1/2 lb shrimp, peeled from the jacket
Spices : (finely chopped)
- 3 cloves garlic
- 3 pieces candle nut
- 1 big red tomato
- 2 teaspoon sambal oeleg or 2 pieces big red chili
- 1/2 teaspoon tamarind
- salt
- sugar

Make it :
1. Combine spices ingredients to a bowl. Don't forget to taste. Place into steamer dish, add peeled shrimp and mix with spices.
2. Steam for another 15-20 minutes.
3. Place into prepared dish and serve with steamed vegetables. Enjoy.

Sauteed Shrimps with Green Chili and Asian Herbs (Tumis Udang Cabe Hijau)

Last night we bought shrimps from Von's store. This lunch i decide to cook the shrimp and make this dish.
You can find the Asian Herbs at Thai Store or Indonesian store, because they have the same ingredients for cooking.
I serve with steamed black rice and salad mix.

- 1/2 pounds uncooked shrimps, peeled from the jacket
- 4 cloves shallots, thinly slice
- 2 cloves garlic, thinly slice
- 1/4 teaspoon ground ginger
- 2 kaffir lime leaves
- 1/4 teaspoon ground lemongrass or 1 stalk fresh lemongrass,bruised
- 1 green chili or jalapeno, seeded, thinly slice
- 1 stalk green onion, thinly slice
- salt
- sugar
- ground white pepper
- 50 ml water
- 1 tablespoon oil, for saute
- lemon lime, for garnish
1. In a hot skillet, add oil then saute garlic, shallots for 2 minutes.
2. Add ginger, lemongrass, kaffir lime leaves, jalapeno, water, combine it then add shrimps. Saute gently for another 10 minutes.
3. Add green onion and adjust the taste with salt, sugar and pepper. Let cook for another 1 minute.
4. Place into prepared dish, garnish with squeeze lemon and serve warm.
Preparation : 5 minutes
Cooking : 15 minutes

Cumi masak Paprika ( Calamari cooked with Paprika )

What you need :
- 100 gr squid/shrimp
- 4 pcs medium tomatoes or 5 tbsp tomatoes sauce, sliced
- 4 pcs medium tomatoes or 5 tbsp tomatoes sauce, sliced
- 3 cloves garlic, thinly sliced
- 1/3 part of a whole onion, sliced
- lemon lime
- sugar and salt for taste
- sugar and salt for taste
- 1 tbsp soy sauce
- paprika - i used green, red and yellow, seeded, cube sliced
- ground white pepper
- 1/2 cup water
- 1 tsp oil + 1 tsp sesame oil for saute

Make it :
English version
- clean the squids with squeeze lemon lime, let it rest for another 30 minutes.
- bring hot skillet under low heat, add oil+sesame oil then saute garlic and onion until aromatic or for approx 2 min.
- add tomatoes and the squids, saute continuously for another 3 minutes.
- Add water, soy sauce, white pepper, sugar and salt for taste. Let it simmer and sauce are dissolve for another 3-5 minutes.
- Add paprika, saute gently, let it simmer for another 3 minutes also.
- Turn off the heat then serve hot with a warm steam rice ;-)
Note : you can fried the squids separately for another 2 minutes before adding into sauce
Indonesia version
- Bersihkan cumi dengan air jeruk nipis, biarkan selama 30 menit.
- Panaskan wajan dengan menggunakan api sedang, tambahkan minyak+minyak wijen untuk menumis bawang putih dan bawang bombay hingga harum.
- Masukkan tomat dan cumi, aduk rata dan masak selama 3 menit.
- Masuukan air, kecap asin, merica bubuk, garam dan gula, cicipi. Biarkan mendidih dan saus mengental selama sekitar 3-5 menit.
- Tambahkan paprika, aduk perlahan dan biarkan mendidih selama 3 menit.
- Angkat dan sajikan panas bersama nasi hangat :-)

Sardines cooked with Tomato and Chilli ( Sarden masak Tomat plus Cabe )

What you need :
425 gr sardines in can, opened
red bell pepper, sliced 1/2-inches pieces
yellow green pepper, sliced 1/2-inches pieces
green chili, thinly sliced
4 cloves shallots, thinly sliced
3 cloves garlic, thinly sliced
salt and sugar for taste
ground pepper
4 pieces tomatoes, cube sliced
1 stalk green onion, sliced
butter or oil for saute

Make it :
English version
1. In a hot wok, saute butter/oil with garlic and shallots under low heat for approx 2 minutes or until aromatic.
2. Add green chili, saute gently then add bell pepper and green onion.
3. Add sardines from the can, saute gently and let it simmer for another 5 minutes.
4. Add tomatoes, saute gently then add pepper, salt and sugar for taste.
5. Let it simmer for another 3 minutes then turn off the heat and ready to serve with hot steamed rice ;-)
Indonesia version
1. Di dalam wajan panas, tumis bawang merah, bawang putih dengan menggunakan mentega/minyak hingga harum dengan menggunakan api kecil.
2. Tambahkan cabe hijau, tumis kemudian masukkan paprika dan bawang daun.
3. Masukkan ikan sardines dari kaleng, dan tumis perlahan, dan biarkan mendidih selama 5 menit.
4. Tambahkan tomat, aduk rata kemudian masukkan merica, garam dan gula sebagai perasa.
5. Biarkan mendidih selama 3 menit kemudian matikan api dan siap dihidangkan bersama nasi hangat ;-)

What you need :
100 gr squid, cut be a little piece
lemon lime
salt
pepper
sugar
4 pcs coriander leaf or Thai sweet basil
5 pcs garlic, minced
2 pcs Thai chili, sliced
1 pcs red jalapeno, sliced
1 pcs jalapeno, sliced
3 tsp soy sauce
1 tsp sweet soy sauce
1 green onion, sliced
4 tsp corn starch or tapioca flour
olive oil, for saute
2 pcs kaffir lime leaves
Make it :English version
- In a bowl, clean squid into clean water, then put squeeze lemon lime juice, let it rest for another 15 minutes.
- Add pepper and salt on top of squids, let it rest for another 15 minutes.
- Wrap with corn starch, put it at refrigerate for another 30 minutes or more. This step will make squid the flour more absorb.
- Fried squid until crispy, set aside.
- Meanwhile, In a hot skillet, saute garlic, kaffir lime leaves and Thai chili with little bit of oil under low heat until aromatic or in approx 5 min.
- Add jalapeno and green onion, saute continuously for approx 5 min.
- Add soy sauce and sweet soy sauce then fried calamari, saute and until cover by seasoning for another 5 minutes.
- Taste with sugar and salt.
- Turn of the heat then add coriander leaves, saute, then serve ;-)
Indonesia version
- Didalam mangkuk, cuci cumi dengan air bersih, kemudian beri air jeruk nipis, biarkan selama 15 menit.
- Tambahkan merica dan garam, campur kembali kedalam cumi. Biarkan selama 15 menit.
- Taburi dengan tepung maizena hingga cumi terbungkus tepung, simpan kedalam kulkas selama 30 menit atau lebih agar tepung menempel.
- Goreng cumi hingga garing, sisihkan.
- Di dalam wajan, tumis bawang, daun jeruk dan cabe rawit dengan sedikit minyak hingga harum dengan menggunakan api kecil.
- Tambahkan cabe hijau dan bawang daun, tumis kembali hingga layu.
- Tambahkan kecap manis dan kecap asin, aduk, kemudian masukkan cumi goreng, aduk rata.
- Tambahkan garam dan gula, cicipi.
- Matikan api, masukkan daun ketumbar, aduk rata. Sajikan bersama nasi hangat :-)
Preparation Time : 30 min
Cooking Time : 20 min
Servings : 2-3 persons

Fried Fish with sweet sauce ( Ikan asam manis )

What you need :
--Fish Ingredients :
2 cups of cube sliced fish - i used Tilapia fish
1 cloves garlic, grated
1/2 teaspoon of ground ginger
2 tablespoon of lemon lime
1 teaspoon salt
1/2 tablespoon of white/black ground pepper
--Dipping Ingredients :
3 tablespoon of cornstarch/tapioca flour
3 tablespoon of rice flour - you can substitute with cornstarch
olive oil or peanut oil for fried
1 pieces of egg, place in a bowl then beat it.
--Sauce Ingredients (Bahan saus):
2 cloves garlic, thinly sliced (2 buah bawang putih, iris halus)
1/2 cup sliced onion (1/2 cup bawang bombay iris)
2 tablespoon tomato sauce (2 sdm saus tomat)
1 cup of sweet peas (1 cup kacang polong)
1 cup of carrot, sliced then steamed (1 cup wortel. potong-2 kemudian rebus sebentar)
2 pieces of tomato, sliced (2 buah tomat, iris)
salt and sugar for taste (garam dan gula sebagai perasa)
1 cup of water (1 cup air )
2 tsp corn starch mix with water for thickness (2 sdt maizena campurkan dengan air)
olive oil for saute (minyak untuk menumis)
Note : 1 cup = 236.59 ml
Make it :
Preparation Time : 20 min
Cooking Time : 25 min
English version

- Bring into hot oil.
- Fried it until golden brown at both side. Set aside.
- In a pan, saute garlic, onion with little bit of olive oil under low heat in approx 5 minutes.
- Add water, tomato sauce, salt and sugar, stirring occasionally until sauce less.
- Add carrot, peas, tomato, mix it and stirring gently.
- Add corn starch, saute then ready to serve.
- Pour fried fish with sauce before serve.
- Serve with steamed rice.

2. Celupkan ikan kedalam telur kosok satu satu persatu, kemudian celupkan kedalam tepung. Goreng hingga kulit kecoklatan. Sisihkan.
3. Didalam wajan masukkan bawang putih, bawang bombay menggunakan minyak hingga harum.
4. Tambahkan air, garam, gula aduk rata hingga mendidih.
5. Masukkan wortel dan kacang polong, aduk rata, diamkan selama 1 menit.
6. Masukkan tomat, kemudian corn starch+air untuk mengentalkan saus. Aduk rata. Tuangkan diatas ikan pada saat akan disajikan.

Calamari with Sweet and Tangy Sauce ( Cumi Asam Manis )

1 1/2 cup sliced squid, clean and give squeeze lemon juice
4 pcs tomatoes, sliced or 2 tbsp ketchup
2 stalks green onion, sliced
4 cloves red pearl onion/shallots, minced
3 cloves garlic, minced
1 tsp sambal oeleg or 2 pcs Thai chili - as you wish
100 ml water
sugar and salt for taste
ground white pepper
oil for saute

Make it :
English version
- In a wok, saute garlic, sambal oeleg and red pearl onion until aromatic under low heat or for approx 5 min.
- Add tomatoes, saute for approx 2 min.
- Add squid, saute continuously until cooked for approx 5 min, do not over cooked.
- Add little bit of water, then add sugar, pepper and salt for taste.
- Let it shimmer, then add green onion, gently sauteing.
- Remove from the heat. Serve with hot steam rice.
Indonesia version
- Didalam wajan, tumis sambal oeleg, bawang putih dan bawang merah dengan menggunakan sedikit minyak hingga harum, dengan menggunakan api kecil.
- Tambahkan tomat, aduk selama 2 menit.
- Tambahkan cumi, aduk rata selama 5 menit hingga cumi matang (jangan terlalu lama).
- Tambahkan sedikit air, kemudian gula, garam dan merica untuk perasa dan cicipi.
- Biarkan hingga mendidih perlahan, tambahkan bawang daun, aduk rata.
- Matikan api, sajikan hangat bersama nasi panas :-)

Sweet and Sour Shrimp ( Udang saus Rica )

What you need :
2 cup shrimps
4 cloves shallot, thinly sliced
2 cloves garlic, thinly sliced
4 pieces tomato, sliced
1/4 tablespoon ground ginger
1/4 tablespoon ground lemongrass
2 pieces kafir lime leaf
2 stalks green onion, sliced
salt
crushed chilli or ground pepper
sugar
1/2 cup water
oil for saute
2 tablespoon lime or lemon water
sweet basil

Make it :
English version
1. Rinse shrimp with water, then spread with lemon, put it aside for 10 minutes.
2. In a sauce pan, under low heat, put a little bit of oil.
3. Add shallot, garlic, ginger and lemongrass, stirring occasionally until aromatic for approx 5 minutes.
4. Add green onion, water, tomato, chili or pepper and green onion.
5. Put shrimp into boiled soup, stirring occasionally until shrimp cook under low heat for approx 10 minutes.
6. Add salt and sugar for taste.
7. Serve with hot steam rice.
D3sy's Kitchen Tips :
- Do not too longer for cook the shrimps.
Indonesian version
1. Bersihkan udang dengan air bersih, kemudian beri air jeruk nipis untuk menghilangkan bau amis.
2. Di dalam wajan, beri sedikit minyak, tumis bawang merah+bawang putih+jahe+serai+cabe hingga harum dengan menggunakan api sedang.
3. Tambahkan tomat, daun jeruk, daun bawang dan air. Aduk rata.
4. Setelah saus mendidih, masukkan udang. Aduk perlahan selama kurang lebih 10 menit.
5. Beri garam dan gula untuk perasa.
6. Sajikan bersama nasi hangat.
