Thanksgiving : Citrus Mustard Basted Turkey

My first experience to cooked Turkey. We've celebrate early Thanksgiving and invited couple friends for join dinner with us.

Here, I will share the recipe with you and maybe give you some ideas.

What you need :

- 1/2 cup or 1 stick softened unsalted butter ( 4 onz mentega, lelehkan)
- 3 tablespoon chopped fresh tarragon, I skip this (3 sdm daun taragon, aku gak pake)
- 3 tablespoon chopped fresh marjoram, I skip this (3 sdm dauh marjoram, aku gak pake)
- 2 tablespoon chopped fresh sage (2 sdm daun sage)
- 1 tablespoon lemon zest (1 sdm air jeruk nipis)
- 1 tablespoon orange zest (1 sdm air jeruk lemon)
- 2 tablespoon Dijon-style mustard ( 2 sdm mustard)
- 1/2 teaspoon salt (1/2 sdt garam)
- 1/4 teaspoon ground black pepper (1/4 sdt merica hitam bubuk)
- 1 (14-16 pounds) Fresh Whole Turkey, thawed if frozen. ( 1 buah ayam kalkun utuh, biarkan dalam suhu ruangan apabila sebelomnya ditaruh dalam kulkas).

Make it :

1. Preheat oven to 325 degrees F. Combine butter, herbs, zest mustard, salt and pepper in work bowl or food processor, cover. Process until well blended.

2. Remove neck and giblets from body and neck cavities of turkey. Reserve giblets for stuffing recipe or dripping sauce. Place half the butter mixture under breast area. Rub remaining butter mixture over breast and legs of turkey.

3. Carefully work fingers under skin on breast of turkey. Place half the butter mixture under breast area. Rub remaining butter mixture over breast and legs of turkey.

4. Place turkey, breast side up, on a flat rack in a shallow baking pan. Approximately 1 hours. Then cover breast and top of drumsticks loosely with foil to prevent over browning.

5. Roast turkey another 3 hours or until meat thermometer reaches 180° F, when inserted into the deepest part of the thigh.

6. Let turkey stand 15 minutes before carving. Enjoy.

Indonesia version

Cara memasak :

1. Panaskan oven 325 derajat F atau 169 derajat C. Campurkan semua bahan kecuali kalkun didalam mangkuk. Aduk hingga tercampur rata.

2. Hilangkan bagian leher dan bagian dalam/jerohan turkey. Sisihkan bagian dalam kalkun untuk membuat saus. 
Dengan menggunakan tangan, buat jalan didalam kulit, antara kulit dan daging untuk memasukkan bumbu.
1/2 dari campuran bumbu oleskan ke kulit turkey bagian dalam (bagian dalam diantara kulit dan daging) hingga rata. 

3. Sisa bumbu oleskan di bagian kulit luar kalkun hingga merata, dan oleskan pula di bagian lain Turkey.

4. Letakkan ayam yg sudah dibumbui ke dalam wadah yg rata utk meng-oven, letakkan dada Turkey menghadap ke atas.
Setelah 1 jam, tutup bagian dada dan paha ayam dengan kertas aluminium foil untuk menghindari terpanggang berlebihan.

5. Oven ayam selama 3 jam atau cek dengan termometer utk daging hingga suhu mencapai  180 derajat F atau 80 derajat C.
Cek suhu di bagian daging dada kalkun yang paling dalam.

6. Setelah kalkun matang, biarkan selama 15 menit, baru potong-2 dan sajikan.
