"Santa Maria Style BBQ" Rib Eye Steak

We still have rib eye meat on freezer, we decided to cook it for dinner tonight. First, I tahwed the meat because it frozen.
On Saturday, sometimes we like to go to AG Farmers Market. I like to go to Farmers Market because you can get fresh vegetables and fruit or even flower with a good deal.
We went there and bought some vegetables for salad, I think salad is always perfect with steaks.
About the corns, I bought couple days ago at grocery store because I got a good deal.
We marinated the meat with Santa Maria Style Barbecue. You can check the similar recipe, I posted Tri-tip steak's recipe.
Here, I will share the recipe with you and maybe give you some ideas.

What you need :
- 2 lbs beef rib eye
- Santa Maria Suzie Q seasoning mix
- Lizano sauce - as your wish, you can skip or substitute with other sauce.
Note :
- Santa Maria Suzie Q seasoning is available at Costco, especially at Central Coast, CA.
- Lizano is vegetable seasoning mix.

Make it :
1. In a bowl, add all ingredients.Rubbing it in as you would a dry rub. Let rest for 1 hour or more at room temperature.
2. Prepare a grill with medium heat. Place the steak in the middle of hot.
3. Flip steaks with tongs. Grill steaks 6 minutes per side for medium rare.
4. When steak is done to your liking, transfer to plate.
5. Let rest for about 5 minutes to allow the meat juices to redistribute and settle before servings.
6. Serve as individual steak or slice just before serving on plate. Enjoy.
Serving Suggestion :
- Salad
- Cooked white sweet corn
Preparation : 10 minutes
Cooking : 20 minutes

Beef Burger with Pepper Jack Cheese and serve without Burger Bun

I bought ground beef at Von's with competitive price. We decided to make beef patty with our spices taste.
This is a good way to enjoy beef patty without burger bun. I served with thinly sliced Lettuce iceberg and cherry tomato. This food is turn out so delicious.

What you need :
- 2 lb ground Beef
- 3 cloves Garlic, minced
- 1/2 cup dice Sweet Onion
- Suzie Q Santa Maria BBQ Seasoning - you can substitute with your favorite sauce
- Ground Black Pepper
- Lizano sauce, or salsa sauce - you can substitute with your favorite sauce
- 1 piece Jalapeno, seeded, dice
- Pepper Jack Cheese, or your favorite cheese
Side Dishes :
- cherry tomato
- sliced Lettuce iceberg
- salad dressing
Make it :1. Combine and mix thoroughly all ingredients except Pepper Jack Cheese in a big bowl. Shape firmly into 4 patties, 1/2-inch thick each.
2. Cook patties in BBQ grill 10 minutes or until done. Put Pepper Jack Cheese on top about 1 minutes before take it from the grill.
3. Place into prepared dish with sliced Lettuce and tomatoes. Don't forget to put mayonnaise and ketchup. Enjoy !

Baked Chicken marinated with Indonesian spices ( Ayam panggang bumbu rujak )

I searched and typed some words on the Google.com, I got one that would be perfect. I reducing and adding some ingredients as my desired. It wasn't hard to make if you have all the ingredients in place. How about the taste? Hmm, the chicken is tasty and I would repeat to make this dish.

What you need :
- 4 chicken thigh or breast
- 2 Indonesian bay leaves (I skip this because I didn't have it)
- 4 kaffir lime leaves, teared
- 1 lemongrass, bruised
- 200 ml coconut milk (I substituted with whole milk)
- 1 limes for drizzling the chicken
- 1 teaspoon oil for saute
Spices grind into a paste :
- 1 teaspoon ground red chili or 3 pieces red chili pepper, you can reduce as you desired
- 8 cloves shallots
- 2 cloves garlic
- 4 candlenuts
- 4 cm fresh galangal or 1/4 teaspoon ground galangal
- 1/4 teaspoon ground ginger
- 1/5 teaspoon ground turmeric
- 1/3 teaspoon dried shrimp paste - I skip this
- salt as desired
- 2 teaspoon brown sugar
- 1 teaspoon tamarind, dissolved in a small amount of water
Make it :1. Wash chicken and drizzle with lime juice over chicken, set aside for next 15 minutes.
2. Preheat oven at 350 degrees F. Lightly grease a baking dish.
3. Meanwhile, in a skillet, at medium high heat, add oil and saute spices paste, Indonesian bay leaves, lemongrass and kaffir leaves until fragrant.
4. Add chicken and coconut milk, stir one a while and bring to broil.
5. Reduce the heat to low medium and let cook until thicken.
6. Bake chicken for 15-20 minutes and turn the oven knob into hi-broil. Broil until the chicken surface turn a bit darker or dry.
Preparation : 10 minutes
Cooking : 35-40 minutes

"Santa Maria Style BBQ" Tri-Tip Steak

Tri tip is a great cut of meat and certainly one of the classics for outdoor cooking.
We served this on Sunday for dinner with my husband parents.
Tri tip used to be a very local to Northern California, but is becoming popular with chefs across the country.
Santa Maria-style barbecue is the authentic taste experience of Santa Maria.
Here, I will share the recipe with you and maybe give you some ideas.

Roasted Chicken
You can buy the rotisserie chicken at grocery store, and they're actually pretty good. But of course I think I can do better, so we made it at last Saturday for dinner.Here, I will share the recipe with you and maybe give you some ideas.

What you need :- 1/2 stick softened unsalted butter (2 oz mentega, lelehkan)
- 1 tablespoon chopped fresh sage (1 sdm daun sage)
- 1 tablespoon lemon zest (1 sdm air jeruk nipis)
- 1 tablespoon Dijon-style mustard (1 sdm mustard)
- 1/3 teaspoon salt (1/3 sdt garam)
- 1/4 teaspoon ground black pepper (1/4 sdt merica hitam bubuk)
- 1 (6 pounds) Fresh Whole Chicken, thawed if frozen. (1 ayam utuh, biarkan di suhu ruangan apabila sebelomnya disampan di lemari es)
Make it :1. Preheat oven to 325 degrees F. Combine butter, herbs, zest, mustard, salt and pepper in work bowl or food processor, cover. Process until well blended.
2. Remove neck and giblets from body and neck cavities of chicken. Reserve giblets for stuffing recipe or dripping sauce. Place half the butter mixture under breast area. Rub remaining butter mixture over breast and legs of chicken.
3. Carefully work fingers under skin on breast of chicken. Place half the butter mixture under breast area. Rub remaining butter mixture over breast and legs of chicken.
4. Place chicken, breast side up, on a flat rack in a shallow baking pan.
5. Roast chicken another 2 hours or until meat thermometer reaches 170° F, when inserted into the deepest part of the thigh.
6. Let chicken stand 10 minutes before carving. Serve with gravy :-)
Indonesia version
Cara memasak :
1. Panaskan oven 325 derajat F atau 169 derajat C. Campurkan semua bahan kecuali ayam didalam mangkuk. Aduk hingga bumbu tercampur rata.
2. Hilangkan bagian leher dan bagian dalam/jerohan ayam. Sisihkan bagian dalam ayam untuk membuat saus.
Dengan menggunakan tangan, buat jalan didalam kulit, antara kulit dan daging untuk memasukkan bumbu.
1/2 dari bumbu oleskan ke kulit ayam bagian dalam (bagian dalam diantara kulit dan daging) hingga rata.
3. Sisa bumbu oleskan di bagian kulit luar ayam hingga merata, dan oleskan pula di bagian lain ayam.
4. Letakkan ayam yg sudah dibumbui ke dalam wadah utk meng-oven, letakkan dada ayam menghadap ke atas.
5. Oven ayam selama 2 jam atau cek dengan termometer utk daging hingga suhu mencapai 170 derajat F atau 77 derajat C.
6. Setaleh ayam matang, keluarkan dari oven, diamkan ayam selama 10 menit, baru potong-2 dan sajikan.

- 4 chicken thigh
- 3 tablespoon Thai sweet chili sauce - Mae Ploy Brand
- 4 tablespoon Italian dressing and marinate - Kraft Brand
- 1 tablespoon Santa Maria Barbecue seasoning - or you can substitute with salt and freshly ground pepper
- a small pastry brush
- cooking spray
English version
- Spray the grill with cooking spray first the preheat the grill with high temperature.
- Mix Thai sweet chili sauce and Italian sauce into a small bowl. And place the small brush too.
- Place the meat into the grill, brush both side with seasoning.
- Cook until golden brown and cooked through.
- Serve with side dishes and enjoy :-)
D3sy's Kitchen Tips :
- Set the grill temperature into medium into low heat
- You need often to season with brushing the both side of chicken with mix seasoning.
- Bring much love into your food :-)
Indonesia version
- Spray panggangan dengan spray khusus makanan dan panaskan panggangan.
- Letakkan daging ayam diatas panggangan dan olesi dengan bumbu.
- Panggang hingga ayam berwarna kecoklatan dan termasak sempurna.
- Sajikan bersama pelengkap :-)
Preparation : 5 minutes
Cooking : 30 minutes
Servings : 2 persons and each got 2 pieces of chicken.

Chicken Oven cooked with Coriander spices ( Ayam Oven bumbu Ketumbar )

What you need :
- 3 pieces Chicken Thigh - prefer skinless
- 4 cloves garlic, minced
- 3 cloves shallots, minced
- 1 teaspoon ground coriander
- 2 tablespoon sweet soy sauce
- salt for taste
- ground white pepper
English version
1. In a hot wok, put chicken, garlic, shallots, coriander, salt and pepper under low heat.
2. Saute gently until half cook for approx 10 minutes. Turn of the heat and set aside.
3. Preheat oven for 350 degrees F and lightly grease with butter or cooking spray.
4. Add sweet soy sauce and combine with cooked chicken.
5. Put chicken on the tray. Bake it.
6. In every 2 min, spread with remaining sauce until chicken are fully cooked for approx 10 min.
7. Serve hot with soup ;-)

Indonesia version
1. Didalam wajan panas, masukkan ayam, bawang merah, bawang putih, garam dan merica. 2. Tumis perlahan hingga berubah warna dengan menggunakan api kecil atau kurang lebih selama 10 menit. Matikan kompor dan sisihkan.
3. Panaskan oven dengan menggunakan suhu 350 derajat F dan siapkan loyang yg diolesi mentega atau minyak.
4. Campurkan kecap manis dengan ayam yg sudah ditumis.
5. Letakkan ayam diatas loyang dan kemudian masukkan kedalam oven.
6. Setiap 2 menit, olesi ayam dengan sisa bumbu, oven selama kurang lebih 10 menit.
7. Sajikan hangat bersama sup ;-)

Indonesian Chicken Satay ( Sate Ayam )

What you need :
4 pieces chicken thighs (prefer used boneless and skinless), cube sliced
Sweet soy sauce
Bamboo skewer, let it soak into water for another 1-2 hours before start Barbecue
--Marinated Ingredients (mix it) :
1 tsp ground coriander
1 tsp salt
1 tsp sugar
5 cloves garlic, finely minced
1 tsp oil
-- Sauce Ingredients (mix it):
Sweet soy sauce
Soy sauce
Peanut butter
Thai Chili, sliced (optional)
Note :
This sauce isn't necessary because the satay is tasty from longer marinated. You can skip this sauce. ;-)
-- Complements Ingredients (mix it):
1 pieces Cucumber, diced
1-2 cloves red pearl onion, sliced
1 tbsp white vinegar

Make it :

1. In a container, add chicken + marinated ingredients, mix it.
2. Let it rest in refrigerator for at least 1 hours before barbecue process.
3. Put and stick 5 pieces or more chicken into bamboo skewer.

- Ketika membakar sate, olesi bumbu hingga sate amsak.
- Sajikan bersama pelengkap.
