Mango with Sticky Rice - Thai Dessert
I wasn't from Thailand but this time I try to make a famuos dessert from Thai.I ate this dessert while we had been gone at Seattle. We ate lunch at Thai Ocean, West Seattle. This is seasonal dessert and available on Mango season only.
It is the best way to enjoy mango and to pair the sweet fruit with sweet and salty coconut-milk sticky rice.

What you need :
- 1/2 cup raw sticky rice, soak in water for at least 1 hour.
- 1/2 cup coconut milk, I used chao koh brand, shaken
- 1/4 teaspoon salt
- 1-1/3 tablespoon white sugar, I used Equal sugar
- 1 sweet ripe yellow mango
- toasted sesame seeds (optional)
For the sauce :
- 1/4 cup coconut milk , I used chao koh brand, shaken
- a pinch of salt
- 1 teaspoon white sugar
- 1/2 teaspoon tapioca starch dissolved with 1 teaspoon water
Make it :1. Steam sticky rice along with salt, sugar and coconut milk, stir with wooden spoon once a while until the rice is fully cooked.
2. Prepare the topping sauce as well. In a small saucepan, add coconut milk, sugar and salt, and stir over low heat until dissolved. Mix tapioca starch with water then add into sauce as well. Stir until thickened and remove from heat.
3. Slice mango as shown and arrange on plate. Spoon an equal amount of sticky ice next to it and top with a few spoons of the ticker sauce. Garnish with toasted sesame seed. Enjoy!
Preparation : 5 minutes
Cooking : 20 minutes

Apple + Persimmon + Asian Pear Pudding

What you need :
- 1 pack Powdered pudding - Agar Swallow Indonesian Brand, you can used another brand.
- 900 ml water - i used 400 ml fresh milk and 500 ml water
- an apple, diced
- an Asian pear, diced
- a persimmon, diced
- granulated white sugar
- a pinch of salt
1. In a sauce pan, mixing water+milk+powdered pudding+pinch of salt. Add sugar and don't forget to taste.
2. Let it boil and saute gently.
3. Put sliced fruit into preparation dish, then pour mixing boiled pudding.
4. Refrigerate for another 30 minutes or until firm.
5. Slice then serve :-)
Preparation : 5 minutes
Cooking : 10 minutes
Servings : 4-5 servings

Indonesian Layered Cake ( Kue Lapis )

What you need :- 500 ml coconut milk, i used 350 ml coconut milk and 150 ml fresh milk
- 200 gram tapioca flour
- 50 gram rice flour
- 200 gram granulated white sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- coloring cake - i used chocolate color
Make It :English version
- Bring water into boil at steamed pan and lightly grease non-stick loaf pan with butter or oil.
- In a big bowl, place all ingredients except coloring cake. Mix it and until dissolve.
- A half of batter place in another bowl then add coloring cake on it. Dissolve it.
- Pour batter into pan for another 3 tablespoon. Let it cook for another 10 minutes.
- Repeat for remaining butter also different color for every layer.
- Let it cool for another 10 minutes before slice it then ready to serve :-)
D3sy's Kitchen Tips :
- For last step, let it steamed little it longer for another 20 minutes.
- This step will let all layer of the cake steamed and cooked well.

Indonesia version
- Panaskan air didalam panci untuk mengukus dan beri cetakan dengan sedikit mentega atau minyak.
- Letakkan semua bahan kecuali pewarna didalam mangkuk. Aduh hingga rata dan halus.
- Pisahkan setengah adonan didalam wadah lain dan beri pewarna. Aduk.
- Masukkan selapis sekitar 3 sendok makan, biarkan hingga mengeras atau selama 10 menit.
- Ulangi hingga adonan coklat dan putih habis.
- Untuk adonan lapisan teratas biarkan dikukus lebih lama sekitar 20 menit agar semua lapisan kue termasak sempurna.
- Potong-potong setelah dingin dan sajikan :-)

Crepes Normande - Apple in a crepe ( Crepe isi apel )
Crepes Normande is like apple in a crepe. It is a quick dessert to fix. You can top it with whipped cream or ice cream, or maybe drizzled with a little caramel syrup.

The crepes ingredients :
- 1 cup all purpose flour (1 cup tepung terigu)
- 1 1/2 cups milk (1 1/2 cup susu cair)
- 2 large eggs (2 buah telur ukuran besar)
- 3 tablespoons granulated sugar (3 sdm gula putih)
- 1 tablespoon vegetable oil (1 sdm minyak)
- 1 pinch salt (1 cubitan garam)
- 1/4 teaspoon vanila extract (1/4 sdt vanila cair)
- 2 teaspoon chocolate cake powder - as you wish, or you can skip (2 sdt coklat bubuk - sesuai selera atau bisa dihilangkan)
The Filling Ingredients :
- 5 piece big apples, diced (5 buah apple ukuran besar, potong dadu)
- 3 tablespoon butter (3 sdm mentega)
- 3 tablespoon sugar (3 sdm gula putih)
- 1/2 teaspoon ground cinnamon (1/2 sdt kayu manis bubuk)
- powdered sugar for topping (gula halus untuk topping)
Note : 1 US cup = 236.588237 ml
English version
- Sift the flour and chocolate powder into a medium bowl.
- In a small bowl, whisk together the milk, sugar, vegetable oil, salt and vanilla extract.
- Add to the flour+chocolate flour and whip to a smooth batter.
- Heat the crepe pan or omelet pan on medium high heat. Brush with butter.
- Measure of batter into the hot pan. Immediately tilt and rotate the pan so that the batter covers the bottom of the pan in a thin layer.
- Cook until bubbles appear and the bottom of the crepe is a nice eve, golden brown.
- Sturdy spatula to turn the crepe. Cook the second side only it is a blonde color, mot as dark as the first side.
- Remove the crepe to a sheet of parchment paper or waxed paper and repeat with the rest of batter.
Directions for filling :
- Saute the apples in the butter until almost tender.
- Stir in the sugar and cinnamon and cook until the apples are tender and the sugar crystals have dissolved.
- Fill the crepes and fold as desired. Sprinkle with powdered sugar.
Indonesia version
Untuk kulit
- Didalam mangkuk, kocok telur, vanila, gula, minyak, garam, susu cair.
- Campurkan bersama terigu, aduk rata dan hingga adonan halus.
- Panaskan wajan omelet atau crepes dengan menggunakan api sedang. Olesi sedikit mentega.
- Takar adonan kemudian tuang kedalam wajan, segera putar hingga membentuk lingkaran penuh.
- Biarkan masak hingga coklat keemasan.
- Dengan spatula, putar bagian lain crepes dan biarkan hingga cukup kekuningan.
- Angkat dan teruskan hingga adonan habis.
Untuk bahan isian
- Tumis apel bersama mentega hingga apel hampir empuk.
- Masukkan gula dan kayu manis, aduk rata dan masak hingga gula mengental dan saus meresap.
- Isi crepes dan gulung. Beri taburan gula halus diatas crepe.
Preparation : 10 minutes
Cooking Time : 15 minutes

Kolak Singkong ( Cassava cooked with coconut milk )

What you need :
- 1 lbs cassava, peeled the skin then cut in small chunk
- a pinch of salt
- granulated white sugar
- a stalk Pandan leaf
- 1/2 cup coconut milk
- 2-3 cup of water
- 2 tablespoon cornstarch + 4 tablespoon water, dissolve
Note : 1 US cup = 236.588 ml
English version
- In Sauce pan, bring water into boiled, then add sliced cassava and pandan leaf.
- Let it cook until cassava tender, then adding coconut milk, a pinch of salt, and sugar.
- Saute gently and adjust the taste with sugar.
- Let it simmer for another 5 minutes.
- Place cornstarch+2 tsp water into a small bowl, combine and mix together. Then pour it into saucepan. Saute continuously until thick enough.
- If you wish the gravy more thin, you can skip to add cornstarch.
- Let it simmer for another 2 minutes. Remove from the heat.
- Serve warm or cold (put into refrigerate before serve or adding ice cube).
Indonesia version
- Didalam panci, rebus air hingga matang, masukkan singkong dan daun pandan.
- Biarkan masak dan singkok menjadi empuk.
- Masukkan santan, sejumput garam, dan gula.
- Aduk rata dan cicipi.
- Didalam mangkuk campurkan 2 sdt air + tepung maizena, aduk rata. Kemudian masukkan kedalam panci. Aduk rata hingga cukup kental.
- Step ini bisa dihilangkan jika menginginkan saus yg lebih encer.
- Biarkan mendidih selama 2 menit. Angkat dari kompor.
- Sajikan hangat atau dingin (masukkan kedalam kulkas atau tambahkan es)

Puding Mangga ( Mango Pudding )

What you need :
- 1 pack of gelatin/pudding powder
- 100 ml water
- 250 ml whole milk
- 350 ml mango juice or orange juice
- a pinch of salt
- sugar
- cube slice mango



Make it :
English version
- Add whole milk, juice and water into a medium saucepan. Cook in medium heat.
- Bring to a full boil while stirring constantly, Remove from heat.
- Immediately pour contents of packet into the saucepan, dissolve completely.
- Immediately pour mixture into shallow molds let cool.
- Rrefrigerate at least 2 hours or until set. Run small spatula around edge mold to loosen.
- Invert onto a serving dish.
- Top with 1 tbsp of evaporated milk (as you wish) and slice of fresh mango then serve.
Note : Some of the packet has different step to cooked of packet, so please read and follow instruction behind back of packet.

Indonesia version
- Didalam panci saus masukkan susu, jus,dan air. Masak dengan api sedang.
- Masak hingga mendidih dan aduk rata, angkat dari api.
- Segera tuang bungkus agar-2 kedalam panci, aduk hingga rata.
- Masukkan kedalam cetakan dan biarkan dingin.
- Masukkan kedalam kulkas selama 2 jam atau hingga padat.
- Sajikan bersama susu cair - jika kurang manis dan sisa potongan mangga.
Note : step sebelom adonan diletakkan dalam cetakan sesuaikan dengan masing-2 jenis agar-agar, dan lebih baik sesuaikan dengan aturan/Instruksi pada balik bungkus agar-agar.
Preparation : 15 minutes
Serving : 8 pieces (5x5-cm pieces)

Puding Buah Segar ( Fresh Fruit Pudding )

What you need :
- 1 pack Agar-Agar Swallow Globe or pudding powder
- 200 ml milk
- 1/2 tsp vanilla extract
- 500 ml water
- granulated sugar - i used Equal for sweetener
- a pinch of salt
- cube sliced fresh fruit - i used honeydew, apple and papaya
Note : If you use another brand, please follow the instruction behind back of packet to cooked the pudding.
Make it :English version
- Bring into boil, mixing pudding powder, water and milk.
- Add sugar and salt, saute gently until simmer and dissolve. Don't forget to taste.
- Pour a half into preparation dish as a mold, then add fruit, then pour the rest of the pudding.
- Let it firm or put into refrigerator.
- Serve cold with rest of cube sliced of fruits ;-)
Indonesia version
- Didihkan air, susu dan puding bubuk.
- Tambahkan gula dan garam, jangan lupa cicipi, biarkan sampai mendidih.
- Tuang 1/2 adonan kedalam loyang cetakan, masukkan potongan buah, kemudian tutup dengan sisa puding.
- Biarkan hingga mengeras dan masukkan kedalam kulkas.
- Sajikan dingin bersama sisa potongan buah segar :-)

Mint Chocolate Chip Home-Made Ice Cream
You need ice cream maker to made this recipe. The ice cream maker help you and make more quicker to made the ice cream.Here, I will share the recipe with you and maybe give you some ideas.

What you need :
2 cup of milk
2 cup of cream ( i did substitute with half & half milk)
1/2 tbsp vanilla
1/4 tbsp mint extract
3 eggs
1 cup of sugar
a few drops of green food coloring(optional)
1/4 cup semi-sweet mini chocolate chips (or shaved chocolate)

Ice Cream Maker
Cake Mixer
Make it :English Version
1. Take the Chillfast alumunium cylinder out of the freezer for another 5 hours or more.2. Beat eggs and milk together in a large saucepan.
3. Add sugar, cook over low heat, stirring constantly until thickened or for approx. 10 minutes.
4. Mixture should smoothy coat the spoon.
5. Add mint extract and semi-sweet mini chocolate chips or shaved chocolate. Stir.
6. Pouring the ice cream base into the frozen cylinder and turn it clockwise slowly three or four hours.
7. Let the mixture sit for 2 or 3 minutes and turn the handle clockwise again for two or three times and continue this procedure for 15-20 minutes.
8. Refrigenerate overnight.
Indonesia Version
1. Letakkan Alumunium Cylinder kedalam freezer selama minimal 5 jam.
2. Dengan menggunakan cake mixer, kocok telur dan susu + half & half milk.
3. Tambahkan gula, kocok dengan low heat selama 10 menit hingga smoothy.
4. Tambahkan vanila, mint extract dan chocolate chips.
5. Masukkan adonan kedalam Alumunium Cylinder, kemudian aduk-2 dengan putaran arah jam setiap 2 ato 3 menit selama 15-20 menit.
6. Kemudian letakkan kedalam Freezer selama semalam, dan ice cream siap dihidangkan :-)
