Hainan Chicken Rice (Nasi Ayam Hainan)

When I was working in Jakarta, the capital city of Indonesia, almost once a week I have had this dish for lunch at food court in Wisma BCA, Sudirman. This dish is one of my favorite Chinese foods.
I like this dish because it made with a lot of herb such as ginger and garlic.
This dish is perfect for the Winter.
I also have heard from my co-worker, who is from China, that this dish is perfect to soothe the flu.

I finally found a right recipe for this dish and made a perfect dish.
I made once a long time ago but I didn't happy with the result. It didn't taste right.
One day, I was craving for this dish and browsing through the Internet. I was optimist that this dish would come out with a perfect taste. Yeah! I was right!
This dish come delicious. When I made a comparison with my previous recipe, this recipe was a lot easier and used less ingredients. Hmm.. I didn't know why, but right now, I was so happy because I was able to make this dish and came out perfect.

I almost forgot to tell you that I need 40 minutes from preparation until ready to serve. :D
Well, probably you can make this dish less that 40 minutes. When I cooked this dish, I could study and or do the house chores.
I believe, you may want to try to cook it because it was convenience and easy to prepare it.
I let you know that I am not a type of person that enjoys to stand up in front of stove while I am cooking. No way!! :P

As usual, I always made some adjustment from the original source, such as: I didn't saute the ingredients for soup but the taste was much better, and added more garlic and green onion.

Chinese Orange Chicken

This dish is one of my favorite Chinese foods.
This dish turned out awesome!
Another thing that I have to mention, this is the most delicious dish.

I could believe that I made it in less than 20 minutes including preparation.
I prepared this dish with steamed broccoli and carrots to make a healthy meal.

Here, I will share the recipe with you and maybe give you some ideas.

What you need :

2 boneless chicken breast, sliced into 1 inches pieces
2 tbsp cornstarch and water to thickened the sauce
2 cloves garlic, minced
1/2 tsp ground ginger
2 stalks green onion, thinly sliced
2 0r 3 cups peanut oil

sauce mixture :
- lemon zest from 2 lemons
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 1 tablespoon rice wine
- 1/4 cup water
- 1/2 teaspoon sesame oil
- 1/2 teaspoon crushed hot red chili pepper or sambal oeleg (optional)
- 1/3 teaspoon ground black pepper

coating :
- 2 eggs
- 1 cup flour
- 1 cup cornstarch
- 1/3 teaspoon ground white pepper
- 1/3 teaspoon salt

How to make it :

1. Add sauce mixture in medium bowl, mix it thoroughly.
2. Place chicken pieces in large bowl.
3. Stir in egg, salt, pepper and 1 tablespoon oil and mix well.
4. Stir cornstarch and flour together.
5. Add chicken pieces, stirring to coat.
6. Heat oil for deep-frying in wok or deep-fryer to 375 degrees.
7. Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp.
8. Remove chicken from oil and drain on paper towel; set aside.
9. Quickly clean the pan and heat it over high heat.
10. Add 1 tablespoon oil. Add ginger and garlic and stir-fry until fragrant or about 5 seconds.
11. Add sauce mixture and bring to boil.
12. Add cornstarch mixture into boiling sauce, stirring until well mixed.
13. Add cooked chicken and green onion, stirring until well mixed. Remove from heat.
14. Serve over steamed rice and steamed vegetables. Enjoy. :-)

Note : I don't like deep frying food. I only used 1 spoonful oil to fry coated chicken and fried it until golden brown. It's worked!
