Baked chicken cooked with coconut milk and spices

I found this recipe from a cooking website. I reduced and changed some ingredients as my desire. This is easy from preparation until cooking. The result is turn out so delicious.

I served this food with steamed vegetables, sliced tomatoes and steamed black rice.

Here, I will share the recipe with you and maybe give you some ideas.

What you need :

- 2 pieces Chicken Thigh
- 50 ml coconut milk
- salt, sugar
- 1 tablespoon soy sauce
- 1/2 tablespoon Oyster sauce
- oil for saute

Spices grind into paste :
- 2 cloves garlics
- 3 cloves shallots
- 2 pieces red chili, I substitute with 1 teaspoon ground chili, Sambal Oeleg brand


Make it :

1. Preheat oven 350 degrees F. 
2. Bring oil to hot, saute spices until aromatic or about 3 minutes. Add the rest of ingredients and the chicken. Reduce the heat into medium low. 
3. Stir one a while until evaporated.
4. Remove into baking dish. Bake for about 10 minutes.
5. Place into prepared dish and serve with side dishes. Enjoy!

Preparation : 5 minutes
Cooking : 30 minutes

Servings : 2 servings

Beef Burger with Pepper Jack Cheese and serve without Burger Bun

I bought ground beef at Von's with competitive price. We decided to make beef patty with our spices taste.
This is a good way to enjoy beef patty without burger bun. I served with thinly sliced Lettuce iceberg and cherry tomato. This food is turn out so delicious.

What you need :

- 2 lb ground Beef
- 3 cloves Garlic, minced
- 1/2 cup dice Sweet Onion
- Suzie Q Santa Maria BBQ Seasoning - you can substitute with your favorite sauce
- Ground Black Pepper
- Lizano sauce, or salsa sauce - you can substitute with your favorite sauce
- 1 piece Jalapeno, seeded, dice
- Pepper Jack Cheese, or your favorite cheese

Side Dishes :
- cherry tomato
- sliced Lettuce iceberg
- salad dressing

Make it :

1. Combine and mix thoroughly all ingredients except Pepper Jack Cheese in a big bowl. Shape firmly into 4 patties, 1/2-inch thick each.
2. Cook patties in BBQ grill 10 minutes or until done. Put Pepper Jack Cheese on top about 1 minutes before take it from the grill.
3. Place into prepared dish with sliced Lettuce and tomatoes. Don't forget to put mayonnaise and ketchup. Enjoy !

Preparation : 10 minutes
Cooking : 10 minutes

Servings : 4 servings

Beef Teriyaki on shredded Carrots and sliced Lettuce


This time I made beef teriyaki and the ingredients same as chicken teriyaki which I'd been posted before. 

Serving suggestion for this food is sliced carrot and lettuce, potato salad and tomatoes.

What you need :

- 1 lb Rib Eye Beef, slice 1/2-inch thick piece
- 2 tablespoon soy sauce
- 2 tablespoon mirin (sweet rice wine)
- 1 teaspoon sugar
- 1/3 teaspoon black pepper 
- 2 tablespoon sake (rice wine) - I substituted with Teriyaki sauce
- 2 cloves garlic, grated

Make it :

1. Mix all ingredients except sliced beef in a bowl.
2. Marinated the beef in the mixture for 15 minutes in the refrigerator.
3. Heat some vegetable oil in a frying pan. First, fry one side of the beef on medium heat until the skin is browned.
4. Pour the sauce used to marinate beef in the pan. Cover the pan and steam cook the beef on low heat until done.
5. Remove the lid and simmer until the sauce becomes thick. Turn off the heat.
6. Place the beef into prepared dish with carrots and lettuce. Pour thickened sauce over the teriyaki beef.

Preparation : 5 minutes
Cooking : 20 minutes

Serving : 2-3 servings


Mango with Sticky Rice - Thai Dessert

I wasn't from Thailand but this time I try to make a famuos dessert from Thai.

I ate this dessert while we had been gone at Seattle. We ate lunch at Thai Ocean, West Seattle. This is seasonal dessert and available on Mango season only.

It is the best way to enjoy mango and to pair the sweet fruit with sweet and salty coconut-milk sticky rice.

What you need :

- 1/2 cup raw sticky rice, soak in water for at least 1 hour.
- 1/2 cup coconut milk, I used chao koh brand, shaken
- 1/4 teaspoon salt
- 1-1/3 tablespoon white sugar, I used Equal sugar
- 1 sweet ripe yellow mango
- toasted sesame seeds (optional)

For the sauce :
- 1/4 cup coconut milk , I used chao koh brand, shaken
- a pinch of salt
- 1 teaspoon white sugar
- 1/2 teaspoon tapioca starch dissolved with 1 teaspoon water

Make it :

1. Steam sticky rice along with salt, sugar and coconut milk, stir with wooden spoon once a while until the rice is fully cooked. 
2. Prepare the topping sauce as well. In a small saucepan, add coconut milk, sugar and salt, and stir over low heat until dissolved. Mix tapioca starch with water then add into sauce as well. Stir until thickened and remove from heat.
3. Slice mango as shown and arrange on plate. Spoon an equal amount of sticky ice next to it and top with a few spoons of the ticker sauce. Garnish with toasted sesame seed. Enjoy!

Baked Chicken marinated with Indonesian spices ( Ayam panggang bumbu rujak )

I searched and typed some words on the Google.com, I got one that would be perfect. I reducing and adding some ingredients as my desired. It wasn't hard to make if you have all the ingredients in place. How about the taste? Hmm, the chicken is tasty and I would repeat to make this dish.

What you need :

- 4 chicken thigh or breast
- 2 Indonesian bay leaves (I skip this because I didn't have it)
- 4 kaffir lime leaves, teared
- 1 lemongrass, bruised
- 200 ml coconut milk (I substituted with whole milk)
- 1 limes for drizzling the chicken
- 1 teaspoon oil for saute

Spices grind into a paste :
- 1 teaspoon ground red chili or 3 pieces red chili pepper, you can reduce as you desired
- 8 cloves shallots
- 2 cloves garlic
- 4 candlenuts
- 4 cm fresh galangal or 1/4 teaspoon ground galangal
- 1/4 teaspoon ground ginger
- 1/5 teaspoon ground turmeric
- 1/3 teaspoon dried shrimp paste - I skip this
- salt as desired
- 2 teaspoon brown sugar
- 1 teaspoon tamarind, dissolved in a small amount of water

Make it :

1. Wash chicken and drizzle with lime juice over chicken, set aside for next 15 minutes.
2. Preheat oven at 350 degrees F. Lightly grease a baking dish.
3. Meanwhile, in a skillet, at medium high heat, add oil and saute spices paste, Indonesian bay leaves, lemongrass and kaffir leaves until fragrant.
4. Add chicken and coconut milk, stir one a while and bring to broil.
5. Reduce the heat to low medium and let cook until thicken.
6. Bake chicken for 15-20 minutes and turn the oven knob into hi-broil. Broil until the chicken surface turn a bit darker or dry.

Preparation : 10 minutes
Cooking : 35-40 minutes

Servings : 2-3 servings

Chicken Teriyaki

1. Poke chicken using fork. Mix other ingredients in a bowl.
2. Marinated the chicken in the mixture for 15 minutes in the refrigerator.
3. Heat some vegetable oil in a frying pan. First, fry the skin side of the chicken on medium heat until the skin is browned.
4. Pour the sauce used to marinate chicken in the pan. Cover the pan and steam cook the chicken on low heat until done.
5. Remove the lid and simmer until the sauce becomes thick. Turn off the heat.
6. Place the chicken into prepared dish then slice and serve. Pour thickened sauce over the teriyaki chicken.

D3sy Kitchen Tips :
- You can cook marinated chicken oven grill or skillet.
- If you're use grill, you need to brush the meat each side with the sauce.

Cooking : 25 minutes

Serving : 2-3 servings
